Hungry Farmer Roast Pork

Serves 4 adults (or 2 farmers)


1 kg roast pork belly (we’ve already scored the rind for you!)

1 lemon and 1 lime (you only need the juice)

2 large tablespoons of soy sauce

2 large tablespoons of ground sesame seed paste (tahini or similar)

You need to make a marinade for the pork, so once you’ve juiced the lemon and lime, mix this with the soy sauce and the ground sesame seed paste.

Put the marinade in a shallow dish and then place the pork belly, skin side up (very important!) so that the skin doesn’t touch the marinade.

Keep in the fridge overnight to absorb the marinade flavours.

The next day, preheat the oven to about 150C/Gas Mark 2.

Take the meat out of the marinade and put into a roasting tin.

Cook the meat for about 2 hours at 150C/Gas Mark 2 and then increase the heat to 250C/Gas Mark 9 for 30 minutes to get fantastic crackling.

Remember the pork skin needs to be dry when you put it in oven to get fantastic crackling!
